My Pages documents all contain periods after each word.
My Pages documents also have a paragraph return sign which appears on the document and strange underlining.
How can I eliminate all these on my Pages documents?
From your description it sounds like you have invisible characters turned on. You can turn this off/on in the "View" menu or by typing ⌘ ⇧ i.

Turn off invisibles in View menu : Hide Invisibles.
