Apple Watch series 3 will not connect, my iPhone 6 keeps saying that neither it nor the Apple Watch are up to date, even though our phone is updated to the most recent iOS software. We’ve tried restarting them both, but nothing has worked so far

If this is a brand new Apple Watch running watchOS 6, it cannot be paired to an iPhone6, it requires a 6s or later.

If your Watch Series 3 is running watchOS 6.1 then you can only pair it with an iPhone 6s or later running iOS 13.2.3 or later.
