Apple watch update error

I somehow ended up unpairing my watch from my iPhone. and then it asked me to update my watch, so I try to update it.. and it keeps saying “unable to check for update.” “An Error occured while checking for software update” . then it Gives me the option to start over or try again. Trying again isnt working, and when i click start over it wont let me “ start pairing” Cause it says “ connect iphone to wifi OR cellular network & to have Bluetooth on. Given we dont have wifi, isnt helping the situation. so now my watch is now unpaired and not updated. and I can’t pair it without the update! so now im STUCK. Answers please?
