can't 'select all' when trying to copy
For some reason since I've gotten an iphone 11 I cannot choose 'select all' to copy and paste something in a text or in notes etc... If you hold it down 'select all' doesn't appear?

Probably you are referring to Notes App.
When you hold it down make sure no words are selected. If a word is highlighted "Select All will not appear.
