I've been trying for the past 4 hours to figure out why dictation will not follow my commands for a new line or new paragraph...it just enters a space. Any idea how I can fix this?

You can't. This change was made by Apple for unknown reasons but possibly connected to the fact that there no longer is a locally-based Extended Dictation. It is managed by an Apple server.
Plenty of complaints have been filed via Feedback - Apple Support and/or Bug Reporter - Submit a bug report with Apple Bug Reporter. You should do the same.
BTW, if you dictate normally including any new lines, etc. Ignore the space. If you tap Enter, your text will be correctly displayed.
If you needed dictation so badly, then you should not have bought a Mac. Dragon Dictate works quite well on most Windows computers. It would be preferred for dictation and speech recognition. Dictation on the Mac is actually quite good. What you are seeing is something oddly introduced in Catalina. Hopefully, it will get fixed. Dictation has always worked properly until now.
Don't forget you also have Voice Control available separately.
Unbelievable! I spend a small fortune on a MacBook Pro and something as simple as dictation does not work as advertised! I shall certainly be complaining and thank you very much for replying so quickly. It's saved me another 4 hours trying to figure it out :)
