Migration Assistant

Who knows which kind of data can be selected and transferred from MacBook (old) to MacBook Pro (new). In particular I want to transfer everything except photos.

Migration assistant: will the data still be on the old mac? If I use the migration assistant to transfer data to a newer macbook I've just bought, will it move the data or copy it? I'd like all the data from the old computer to remain intact.
