How can I switch off System Integrity Protection , if "command" + "R" combination doesn't turn my system on to Recovery Mode? (imac 2017, Mojave 10.14.6, I just want to change system icon).
What do you mean you just want to change system icon, if you mean you want to change the icon of Macintosh HD on your desktop then you do not need to switch System Integrity Protection off.

Ok, I just want to change system icon - "finder" icon. According to opinions, impossible to do it without switching System Integrity Protection off. To do it, I must to turn on Recovery Mode,but command+R - during reboot- doesn't turn it to Recovery Mode.
Just now I tried to set Recovery Mode with your method (your quotation: ...If that still does not work Restart your Mac and press and hold down the option/ alt key down until the Startup Manager screen appears and then select your recovery HD and press Return.), but nothing happend, and system opened by usual way (without possibility to shoose something (e.g. Recovery Mode).
Open Terminal from your Applications/ Utilities folder and enter this command
diskutil list
and then press return.
Is the Recovery HD listed?
Are you pressing the correct keys and keeping them pressed down
while the Mac is restarting.
Can I check what type of keyboard are you using, if it is a Bluetooth keyboard that should be OK, if it is a wired keyboard make sure it is connected directly to the Mac and not plugged in to a USB hub.

How did you get in to your Recovery HD. Quit Disk Utility.
If you want Terminal click on Utilities in the menubar.
