Click on the Settings button located on the right of your screen above the timeline. In the box that appears, uncheck the box that says Automatic Content. Then, when you create projects transitions will not be automatically added. If the Automatic Content box is checked, transitions automatically will be added. Also, if you select a theme transitions will automatically be added.

For projects where transitions already have been added you can easily delete them by going to Edit/Select in iMovie/Transitions. All the transitions in the project will then be selected. Press the delete key on your keyboard to delete them as a batch.
