Multiple devices/Same Apple ID
I share my Apple ID with my husband and son. However this is getting annoying because now I get all of their photos on my phone. If I create each their own ID, will it erase the photos we already have on our phones?

It won't affect your phone.
For your husband and if your son is 13 years old or older.
If your son is under 13 years old, you will need to set up Family Sharing to create an ID for them.
Family Sharing and Apple ID for your child
When changing to the new ID, there may be some data loss, but you can minimize it. If syncing photos with iCloud, ensure Optimization is turned off in Settings/Your Name/iCloud/Photos and/or in Photos/Preferences/iCloud. Then make sure full resolution photos are on the device/computer. When signing out of iCloud, if asked whether you want to retain data, choose yes. Messages conversations will be lost if they are addressed to the ID. See the article below for other places that the old ID should be removed. All this sounds so complicated and frustrating. I don’t want to lose any of our data so if I create a separate ID for each of them is that what will happen?
You shouldn't lose anything. Their data lose should be little to none except for messages.
