How do I find the serial number of my Apple iPad? iPad has been stolen
will Apple be able to provide me this info or even a copy of my original receipt

Apple might be able to provided you with a receipt for that iPad as it is not too old.
You would either need to call your local Apple Store location or travel to your “local” Apple Store location and enquire about this.
Apple Stores only leave records of customer receipts on their systems/database available for a finite period of time.
