Can I just unplug her phone and plug in my phone to use with CarPlay?
Does CarPlay download data (sync) from her phone to use in Carplay?
Or just display info from the plugged in phone.

Yes, you can plug your iPhone into her car, so long as your iPhone supports CarPlay. The vehicle downloads some information, however it knows the difference between devices, and will not mix that stuff up.
