I have a 16 GB ipod with all of my music (purchased from itunes, copied from CD's, etc.) with about 1100 songs. I want to put all the music on the ipod to my new iPhone 11 pro. When I restored the new iPhone pro, for whatever reason, it just copied the music that I had purchased from Itunes.
How do I get all of my music from my ipod to my iPhone 11 pro?

You cannot go direct from one device to the other. You'll need to recover the media into an Tunes library first, then add it to your new device. See Recover your iTunes library from your iPod or iOS device - Apple Community.
