It sounds as if you may have Theatre Mode engaged.

In the watch app on the phone go into general/wake screen and the settings are there.

That was the answer. I had failed to look beyond the wrist motion setting.
It's a really great feature. Until you forgot you've left it on. I use it at night and sometimes in the morning, I forget to take it off. Several seconds of wrist shaking ensue before the "Doh!" moment.
A curious 2 year old shut the feature off. Your answer was correct.
It's amazing what a curious 2-year old can do with technology.
