How do I delete “old” photos from my iPad or iPhone. When I select the photos I want to delete, the trash icon is not activated.

Did you use iTunes to sync the photos onto the ipad? If you did then you have to use iTunes to sync them off (remove them from the sync folder, do a sync and the photos should be gone
