Will I know if my friend has hidden activity from me?

But what if Im not competing then if they hide or remove me as a friend then will I be notified?

You can't hide activity from someone you're competing with;
Share your Activity and compete with friends with your Apple Watch - Apple Support

If your not competing with your friend then yes they can hide their activity but still see yours.
