How do I set up the classic look of the battery charge percentage display with my new XR?

You can’t. There isn’t enough room in the status bar for it without removing something else, and Apple decided that it’s more important to see your cellular network status, Wi-Fi status and the other items on the status bar. But you can drag down from the top right corner of the screen to open the control center, where the battery percentage is always displayed.
