How long should it take to 1) back up 100gb from my MacBook Pro to a 1tb Time capsule and 2) transfer that to my new MacBook pro all over WiFi?

Time Machine backups typically take approximately 25-30 GBs per hour over an Ethernet connection. About 20-25% slower for a wireless one. Restorations take about the same time.
Total guesswork here.
Your Time Capsule is clearly older model.. but you have not stated which one. Nor the distance wifi is expected to reach. So best case, your two different computers are located NEXT to the TC in the same room and connect at 5ghz.
The best speed you can get for backup to TC is around 50GB/Hour and that is with ethernet so my guess is aprox 3-4hours. It might be a bit less and it could be a lot more.
Transfer to Catalina though.. that could take many more hours.. but stick to the min.. 2 hours. It depends how much stuff you are actually transferring.
BTW it is much faster to connect the two laptops. And do the transfer. Pick the fastest possible connection common to both. Wireless is the worst by far.

Thank you. My back took about 4 hours, so that seems about right. The transfer via Migration Assistant started at 10:00 last night and was about 50% when I left at 5:30 this morning (6mbps). Hopefully it'll be done when I get home!
