I have a iPhone 6s Plus. I just received an Apple Watch Series 5 for Christmas. However, the watch is requiring my phone to be updated to iOS 13. My phone updated to 12.4. How do I get it updated to be current?

What is the model number in Settings>General>About?
I'm guessing you do not have a 6s Plus. You probably have a 6 Plus.
It is not compatible with iOS 13 and you will not be able to use the watch with it.
