I am trying to unlock my Mac with my Apple Watch. In system information it says auto unlock is supported and I've tried multiple times and my Mac is up to date but Apple Watch unlock won't work, it says "unlocking my Mac is not supported by your watch". What should I do?

Not sure, but I think you need a newer OS for that to work...
See if you can upgrade to 10.13, or 10.14, see sys requirements...
