I use a Mac Pro (Mid 2012); run High Sierra. According to Apple, I have to replace my old GPU, and turn off FireVault to install Mojave. Is turning off FireVault really necessary? Won't I loose control of my Mac?

Do you mean you have to leave the Mac to Apple for service? If so, I will never turn off FileVault in that case.
Give more details about the situation.
In any case, a full backup of the Mac is mandatory.
