I'm thinking of switching to iCloud full backups (the higher price per gig of backup is not a consideration, FYI). My question: do all my MacBook Pro folders get backed up by iCloud? Even the ones I've created - like temporary ones I use for my own purposes?

Yes, I use Time Machine religiously.
It's Code42 Crashplan that I'm looking to replace. I've been using it for a few years now. I like the idea of off-site storage - but am too lazy to bring a disk to a bank safe-deposit box every week(!)
If they are inside of the iCloud Drive folder, or optionally the Desktop & Documents folders, yes.
These are the only 3 high level folders synced with iCloud.
iCloud is not really considered to be an effective backup solution. Content is not "moved" to iCloud and essentially stays on your Mac's hard drives as well.
In addition to LACAllen's answer: as iCloud is meanly a sync service, use TimeMachine and an external drive if you want to make backups
