To repeat. You do not have Office 2006. There is not, and never was such a version for the Mac. The progression of perpetual license releases (not going back forever) were:
Office X
Office 2004
Office 2008
Office 2011
Office 2016
Office 2019
The Office 2019 apps should all be in the Applications folder, right next to each other. They're not in a subfolder as previous versions (2011 or older) were.
There is no 2006 Mac version of Office. Did you mean 2004?
Regardless, you don't have to remove the old version to install Office 2019.
If you mean Microsoft Office 2019 you don't have to uninstall a previous version. Just purchase Office 2019, download and install it.
Look into the Free LibreOffice, it handles MS Office files…
Apple macOS (Mac OS X)
The software and hardware prerequisites for installing on a Apple macOS computer are as follows:
• LibreOffice 6.3.x: macOS 10.10 (Yosemite) or higher
• LibreOffice 6.2.x: macOS 10.9 (Mavericks) or higher
• Intel processor
• 512 MB RAM
• Up to 800 MB available hard disk space
• 1024x768 graphic device with 256 colors (higher resolution recommended)
It is a recommended best practice to back-up your system and data before you remove or install software.
Notes:
• For certain features of the software - but not most - Java is required. Java is notably required for Base.
• Due to an issue, there are the following restrictions with Java: on macOS 10.10 and newer, JRE isn't found, JDK is required
• LibreOffice 4.3 can still run on OS X 10.6+, but please understand that this support ended when 4.3 was retired on May 27, 2015.

I already had the 2006 Office Home & Student version on an old mac. I purchased a new macbook and the old 32 bit version of office was transferred to my new mac but, it will not work on a 64 bit MacBook. I purchased the 2019 Office Home & Student downloaded it and installed it. However, I can not find the new version anywhere after having installed it. So, I thought I may have to uninstall the old version first.
I see. Well Kurt agrees you shouldn't have to uninstall the old version. I can't say for certain since I have no versions.
