If i go into calendars
choose family calendar (which is shared)
then click on one of fam members name listed
then hit stop sharing
will it only stop sharing the calendar with that one family member or does it mess up my fam share and totally remove them from everything we share together?
i just want to stop sharing calendar with one person but share with everyone else listed

According to the information below from Share iCloud calendars on iPhone - Apple Support, you would only stop sharing the calendar with that individual:
"Change a person’s access to a shared calendar
After you invite a person to share your calendar, you can turn on or off their ability to edit the calendar, or stop sharing the calendar with that person.
next to the shared calendar, then tap the person’s name.Cheers!
