I'm using Apple Mail's undisclosed recipients function to send out a mass email, but when people reply, the entire email list ends up being displayed as part of the original message. How do I prevent this from happening?

Under Apple Mail Preferences/Composing, I unchecked the box for "When sending to a group, show all member addresses." If I then select a group to mail to, the message To: line indicates "Undisclosed recipients."

Apparently, you are NOT using the BCC field to address the messages, you're using the CC field.
You need to put the recipients in the BCC field.
Drag the Group to BCC field.
When you are composing a new message, do you see the areas for
To:
Cc:
Bcc:
Only Bcc is for undisclosed recipients. When someone in the Bcc list replies to all, it will not reply to the other Bcc people. Cc will show all recipients and when one of them replies to all, everyone will be copied and listed in the reply. This is also how other mail clients work, such as MS-Outook, GMAIL, etc.
I'll do that next time but in the meantime the horse is out of the barn. It's poor design on Apple's part of create the undisclosed recipients function in a way that allows all of those undisclosed recipients to be disclosed in a reply email. It's unintuitive.
Maybe you need to clarify what "undisclosed recipients function" you're referring to...
I see no such thing in the native mail app.
Well CC: is Carbon Copy, BCC: is Blind Carbon Copy, but I guess if Apple is talking Undisclosed they should yell out BCC.
Those terms have existed since carbon paper was first used in typewriters.
All that has ever done is not expand the group name out into the individual recipients. It is not and has never been the same as using the BCC field.
