Hi, I have a Macbook Pro mid 2012 13-Inch running both Windows 7 (Bootcamp) and MacOS (Mojave) and I'm looking to buy a thunderbolt display "TB" because they're nice looking and I need more screen real-estate for my music production software on the Bootcamp side of my Macbook. I was wondering which if any "TB" display is compatible with both my Macbook and my current Windows operating system?

The Hub will work, provided Windows is booted with the hub connected.

As long as you boot Windows with the TB display connected.
2014 and older Macs do not support 'hot-plugging' of TB devices. If you do not need the additional connections that come with an Apple TB monitor, you may want to look at Dell monitors with a built-in USB hub, which can be connected via HDMI/DP/miniDP ports. I personally use the Dell U2715H monitors.
Last question, will I be able to use TB Display as second monitor where I can drag over the content from my Macbook to the TB Display? I do not want to purchase the display if I can only screen mirror what's on my Macbook.

In both macOS and Windows, displays can be extended.
