Just to expand a bit on what stedman1 has told you; the version you have on your iPod (iOS 4.2.1) is the current version for that model (a 2nd generation iPod). So it's both the current version and the latest version - for a 2nd generation iPod Touch.

This would indicate that you have a 2nd generation iPod Touch, which can not be upgraded further.
You have a nearly 12-year old iPod Touch 2nd generation that cannot be upgraded/updated any farther than iOS 4.2.1.
The hardware is simply much too old.
