Can I create a guest account on my new IPad?

I can't find anything on the machine for guest account or multiple accounts. Basically my two kids share it, and there is already arguing about 'playing MY game and losing" etc.

Or even have two instances of the same game somehow?

No. iOS devices are strictly single user devices.
