You can time-stamp a cell by double-clicking in a cell (so the cursor is flashing inside it) and choosing Insert > Date & Time from the menu.

Since that is a menu choice you can, as with MacOS applications, create a keyboard shortcut in a minute or two at System Preferences > Keyboard > Shortcuts > App Shortcuts.

Click the + , choose Numbers.app from the dropdown, type "Date & Time" (without the "") in the Menu Title box, and assign a keyboard shortcut that doesn't conflict with another that you already have. Shift-command-M works on my machine.

After you've set up the shortcut you will see it in the Numbers menu.

Thereafter you can double-click a cell type the shortcut, without having to go to the menu.

there is a similar default shortcut Shift-command-M for: "Format —> Image —> Edit Mask".

Good catch. Probably best to use something else, especially if editing masks is part of one's workflow. Pick something that isn't listed at Help > Keyboard Shortcuts in the menu.

Control-command-M works here.

The trick here has always been to remember to first double-click in the cell so that the cursor is flashing in it.
