change apple account

I signed in to apple on another phone, not realising that all photos/texts etc transferred. I naively thought that it was just to buy apps. Now I want to delete it from the iphone that I put it on but keep it on my original phone. Then I want to create a new apple account on the 2nd phone. Can anyone help with this?
