Iphone 8 won't reboot, Freeze on restart screen

I have an Iphone 8, the memory is full and I can't reboot my phone. I tried to connect it to the itunes and update the phone but it is not working. I don't want to restore or else i will loose all the data which I did not backup. what can i do to retrieve the data.
