Welcome to the Apple Support Communities! It sounds like you're seeing a different email address already configured in your new iPhone. I'd be glad to see how I can assist with that.

Did you purchase your iPhone from a carrier, retailer, or Apple Store, or did you purchase it from another user? This might be important as if there is an email already configured, it could be that the previous owner didn't sign their Apple ID out before selling it to you.

If you go to Settings > Your Name, it should list the name and Apple ID signed in. Does yours appear there?

Taking what you said into consideration, it might be a good idea to review If you think your Apple ID has been compromised, as that has information about your account if you believe it compromised, and it will also provide you with steps to take up to and including getting in contact with Apple directly if necessary.
