I was recently trying to get a Wifi 6 card to work on MacOS Catalina to try out a new router. I had problems getting the card to be recognized. Seems like support is missing altogether from the OS.
Does Apple have any plans on adopting 802.11AX?
Only Apple would know and they aren't here.
The iPhone 11 series of devices already support WiFi 6 so I would expect Mac hardware support is on the way.

The latest 802.11AX hardware is not yet included. You can rest assured it will be coming, but we have no insight on a timeline here.
