Sometimes it is very easy and straightforward to add a series to a chart or rescale an axis, and sometimes it is nearly impossible! It is easy to see why most people use Excel!

Besides I figured out the solution using the old "shut it down and come back later method". When I inserted a new sheet, and copied the data into it, the column on the right switched from "Format" to "Sort" hiding all the formatting tools. When I noticed this and clicked on "Format" they were back. Problem solved.

Your best way to see how to add charts is to look at examples using the template example Apple provides. Then use similar table arrangements.
Another is to post an example of what you are doing so we can provide specific suggestions for you
You can always post feedback directly to Apple from Numbers by selecting the Numbers menu item
"Numbers > Provide Numbers Feedback"

1) whether something is selected and
2) what type of thing is selected
