How do I backup my child's iphone with family sharing turned on? H

How do I backup my child's iphone with family sharing turned on? His AppleID is grayed out on both of his devices and I can't access it. In Family Sharing, it says "not using". I can't log him out and back in again because there literally is no way to access that.

For the issue with his Apple ID being greyed out, go to Settings > Screen Time on his iPhone and tap Content & Privacy Restrictions. Under Allow Changes, select Account Changes and set to Allow. See if you can sign out of his account then. This link has more info:
