How do I stop my iPad keyboard from typing a number instead of the corresponding letter

It sounds like you may have Key Flicks turned on. That is where the letter and number are present on the key, and if you flick the key downwards a little, the number will show up instead of the letter. If you wish to disable this feature, go to Settings>General>Keyboard>Enable Key Flicks, and turn that off.
