Someone created an email account to access my Apple ID. However they did this without me even knowing it or being advised somehow!! The new email was made, however I was non the wiser and never changed my Apple ID and carried on not knowing that this person was accessing info in the background!! How is this even possible!!!!

The only way that is possible is if they had known your password to begin with. Any login to your account from a previously unknonw device or computer, would have sent an email to you at the existing account. so you would have known about it.
Where are you seeing this email address? Why do you think your Apple ID was changed?
If you login to https://appleid.apple.com with whatever your email and password were before the change, does it work?
