I was wondering if I took my phone to apple would they be able to fix the back of my phone? It is an iPhone 8 plus and the back is glass, and it is cracked. My second question is that I have apple care so if it is possible to replace the glass on the back of my phone, would it be covered by my apple care?

The glass on the back of iPhone 8, X, Xs, Xr and 11 is fused on and can't be replaced. You will need to total replacement and yes, you can use one of your incidents for replacement if you have AppleCare. The cost in the US will be $99 with AppleCare.

Just to be clear you have to have purchased AppleCare + to use one of your replacements. If you have standard AppleCare it does not cover accidental damage.
