5 watch unresponsive in water, can not quit swim workout while watch is wet?

can not swipe when in the pool to stop workout or switch from water aerobics to lap swimming?

Because when you are in water, the Watch locks to prevent this type of action. You will have to unlock it by releasing the water lock. See this thread for an answer to your question, Apple Watch ‘water lock’ - Apple Community
