How can I download my Apple Card transactions to Quicken?

That is not currently a feature of the Apple Card. There are 3rd party apps for your computer that can create a Quicken import file from the PDF statement.
Check this discussion on the Quicken forum. It looks like there is no automated interface coming any time soon.
