dictation
I turned dictation on. Now every time I enter a letter I get a voice repeating what I have entered. For example if I spell
And, the response is a alpha, n november, d delta. I want to get rid of the responses.

Sounds like you also turned on VoiceOver. Go to Settings>Accessibility>VoiceOver. You will have to tap all of your selections twice. Once to select it, then once to activate it. This is an accessibility feature. You should probably also see the time in the upper left of the status bar surrounded in blue.
