Will erasing all content and settings on my old iPhone remove content from iCloud/new phone. I click erase now and it says this will delete all media and data and reset all settings, this is what I want to happen on the old phone just concerned if I click erase it will delete everything from new phone too

No. To put your mind at ease you should sign out of your Apple ID before doing so. That will unlink the device from the cloud.
