Apple Watch 5: Hermes vs Regular

Hi, I am thinking of buying an Apple Watch - maybe a Hermes-, but have a few questions:

I like the Hermes clock face, but does the Hermes allow for other clock faces (in case you want you something else in the future)?
I still have a iPhone SE (love the size). Will this be a problem for pairing with the Apple Watch now or in the near future?
Is the only difference between Apple Wacht 5 and Hermes the clock face or are there other software differences?

The Apple Watch Series 5 has the option of either having an aluminum case or a stainless steel case at a premium. It also will come with a fluoroelastomer sport band.

watchOS 6 requires an iPhone 6s or later, so you're good to go with your iPhone SE as long as it has iOS 13 installed.
