Launch options for TextEdit

As my eyesight gets worse, I am finding that I often cannot see the highlight colors in the TextEdit app. There does not seem to be a way to change the highlight color in the app, but I recall that there are options that can be set when launching an app from Terminal. So my question is, how can I find a list of these options? For that matter, where can I find a list of these launch options for any app?

text color palette box I'm trying to change the colour of the font in fcpx using an rgb code. I'm clicking TEXT, then FACE. Then I'm clicking on the colour box to open the palette. When I have the palette box open I can manually change the RGB, but it won't change the colour of the text on my timeline. When I've watched youtube videos it changes the colour on the timeline automatically but it's not doing that for me, and I can't find a way to "set" the colour that I'm choosing. I'm probably doing something stupid but just can't figure it out. If I don't click on the colour box to open the palette in a pop up window, the text colour will change,but I can't set the RBG code, which is what I want. Thanks if anyone can help. Not sure I've made sense / explained properly.

Can I change the colour of the text bubbles in Messages (Mojave OS)? I would like to change the background colour of the text bubbles in Messages on my MacBook Air. The colours are really bright, and they cause eye strain in some lights. Also white text on grey background is an accessibility issue for the visually impaired (not all of whom need to switch over to an Accessibility mode - they just want to choose an appropriate colour!)
