Try Force ReStarting your iPhone by following the instructions in this link Force restart iPhone - Apple Support and then try and update your iPhone once again.

If Force ReStarting did not work and you still cannot update your iPhone then here is some information that may help you Update your iPhone, iPad, or iPod touch - Apple Support
