I purchased some song singles from iTunes to be used during my wedding... how can I download and share those files with the sound technician? I see that Apple no longer lets you convert them to other formats...

If they were songs you actually purchased from the iTunes Store (and not leased with an App;e Music subscription), there is no reason why you should not be able to convert them. See:
