My wife & I have a shared ID for my iPhone and her iPad. Very useful for ordering from the Apple Store but a pain as it shares my photos to her and her Facetime calls come to me! Is there an easy way of sharing an ID for the Apple Store (and keeping all my Apps etc.) but having different ID's for everything else? It would be me and the iPhone getting the new ID....

You can change your ID everywhere but the App Store and iTunes or you can set up Family Sharing to share purchases and have completely different IDs.
When changing to the new ID, there may be some data loss, but you can minimize it. If syncing photos with iCloud, ensure Optimization is turned off in Settings/Your Name/iCloud/Photos and/or in Photos/Preferences/iCloud. Then make sure full resolution photos are on the device/computer. When signing out of iCloud, if asked whether you want to retain data, choose yes. Messages conversations will be lost if they are addressed to the ID. See the article below for other places that the old ID should be removed.
