Try this;

On your Apple Watch, tap Settings > General > Reset > Erase All Content and Settings.

On your iPhone, open the Apple Watch app, tap the My Watch tab, then tap your watch at the top of the screen. Tap the "i" next to the watch that you want to unpair, then tap Unpair Apple Watch. Tap again to confirm.

When you Re-pair the watch if there is an update you maybe offered the update as part of the pairing process if there is one otherwise start the update again from the watch app on the phone.
