Connecting to Exchange Server - Wiping
Will one of my IT departments be able to wipe my phone if I connect to their exchange server via IMAP?

No I dont think so but chack this website out.
to protect your account information we cannot publish your Server names in public Knowledge Base. This information can be found on the HostPilot> Home > Exchange servers and settings page.
Note: Your ISP may have blocked SMTP traffic through port 25 in your area. If this is the case, add ":587" (without quotes) to the end of your Outgoing Mail Server Host Name, like this:
your_outgoing_server:587
This will ensure that outgoing SMTP traffic will go through alternate port 587 instead.
5. Complete the setup process. Click SAVE and wait for the iPhone to test your incoming and outgoing mail settings and connect to your mailbox.

If you own your phone, and it is not a company phone, no. There is no way for your IT department to be able to read/delete your data. However, it is an Exchange server, so the administrator could technically see your company emails.
That sounds good. I have successfully connected via IMAP which I believe prevents remote administration/wiping of my iPhone.
If I connect using the "Microsoft Exchange" option on my iPhone/iPad I get the message: "Adding an Exchange account will allow the Exchange administrator to remotely mange your device. The administrator can add/remove restrictions and remotely erase your device." What all can an Exchange administrator do?
Yep, connected IMAP, should be safe from remote administration of my phone!
