Trying to set up my new iPhone 7 but it won’t let me get past the stage of .. “it may take a few minutes to set up your Apple ID” can anyone help me?

Some people have had to let their device run overnight to complete the setup.
Do you have access to another WiFi network where you can try? That has worked for several people.
Try a restart.

Try a forced restart.

If necessary

Do a backup and try a factory reset. Then restore from your backup.
