How do I copy multiple emails?
I need to copy about 500 emails to a new folder, but want to keep them in their original folders as well?
How would I do this?

Yes, Copy should, Move will not. :)
Leastwise it does here, just tested again.

Don't that is possible to do, once you move it into a different folder, you can confirm that by contacting your mail provider or looking at their support site.
In Mail, highlight the Mails, Right click on them & choose Copy To...
